Potato Puffs
Ingredients
- 2 cups leftover mashed potatoes
- 1 whole egg, beaten
- ½ t. salt
- ¼ t. pepper
- 1/3 cup all purpose flour
- 1 t. baking powder
Directions
Mix well. Drop by ½ tablespoon in hot oil or you can also fry them in a skillet in some hot oil as patties. Fry until golden brown on both sides.
Cook's Notes
This is a good way to use leftover mashed potatoes.
