Zeppole (Cheese Fritters)
Ingredients
- 2 eggs, slightly beaten
- 1 cup flour
- 2 t. baking powder
- 1/8 t. salt
- 1½ t. sugar
- 1 cup ricotta cheese
- ¼ t. vanilla
Directions
Combine all ingredients and beat gently until batter becomes sticky. Drop by half tablespoons into deep fat heated to 365 F. Fry about 3 minutes or until brown. Drain. Roll in powdered sugar. Serve at once.
