Fiesta Turkey Soup Recipe
Ingredients
- 1 med. onion, diced
- 1 t. extra virgin olive oil
- 2 garlic cloves, minced
- 3 cups chopped leftover turkey
- 1 can chili beans
- 3 to 4 cups chicken stock
- 1 can tomatoes with green chilies
- 1 bag frozen chopped onion, green and red pepper blend
- 1 cup frozen corn kernels
- 1 t. chili powder
- 1 t. ground cumin
- Salt and pepper to taste
- Toppings of sour cream, cheese and/or chopped cilantro
Directions
Sauté onions in extra virgin olive oil in a large Dutch oven until tender. Add garlic and sauté one minute. Stir in turkey and the rest of soup ingredients. Bring to a boil, stirring occasionally. Reduce heat and simmer 30 minutes. Serve with desired toppings.
