Tofu Scrambler Wrap

Tofu Scrambler Wrap Recipe
Ingredients
- 1 green pepper, chopped
- 1 small onion, chopped
- ¼ cup vegetable broth
- 1 (12-oz.) package extra firm tofu, drained and pressed
- 1 t. chili powder
- 1 t. ground cumin
- 1 t. turmeric
- 2 cups fresh spinach, more or less to taste
- ½ cup salsa
- 4 whole wheat tortillas
Directions
Cook onion and pepper in broth until translucent. Crumble tofu in your hands and add along with chili powder, cumin and turmeric. Saute, stirring for 5-7 minutes, or until done to your liking. Add spinach and cook 1 minute. Add salsa and stir. Serve in warm tortillas.
