Chocolate Mint Sandwich Cookies
Chocolate Mint Sandwich Cookies
1 cup sugar
⅔ cup butter
1 egg
1 t. vanilla
¼ t. mint extract
1½ cups flour
½ cup cocoa
½ t. soda
½ t. salt
1 cup finely chopped nuts
Mint Frosting
3 T. soft butter
2½ cups powdered sugar
2½ T. milk
¼ t. mint extract
2 drops green food coloring
Cream sugar and butter until fluffy. Add egg and flavorings and beat well. Combine flour, cocoa, soda, and salt and add to mixture mixing well. Chill dough until able to form into two long rolls, each about 2 inches in diameter. Wrap in waxed paper and chill until able to slice into about ¼ inch slices. Bake on ungreased baking sheet at 375 F for 5 minutes.
Meanwhile, combine ingredients for frosting and beat with a mixer until smooth.
When cookies are cool, place Mint Frosting between two cookies in sandwich fashion.
