Chicken Barley Soup

Chicken Barley Soup Recipe
Ingredients
- 4 cups water
- 4 cups chicken broth
- 4 cups vegetable broth
- 2½ lb. raw chicken, diced
- 1 cup diced onion
- 1 T. crushed garlic
- 1 whole bay leaf
- ¼-½ t. salt
- ¼ t. pepper
- 2 cups peeled and cubed butternut squash
- 2 cups cubed zucchini
- 2 cups cubed yellow squash
- 1 cup broccoli florets
- 1 cup chopped mushrooms
- 1 cup barley
Directions
Put 4 cups water in a large pot and add the broths, chicken, onion, garlic, bay leaf, salt and pepper. Bring to a boil, then decrease heat and simmer 1 hour. Add vegetables and barley to pot and simmer another hour, or until vegetables are tender.

You can omit some of the zucchini, squash and mushrooms and add other veggies
