Pumpkin Bran Muffins
1 cup bran flakes cereal
1 cup Fiber One cereal
1 ¼ cups fat free milk
1 ¼ cups flour
1 T. baking powder
1 t. cinnamon
1 t. nutmeg
2 eggs
1 cup canned pumpkin
⅓ cup brown sugar
2 T. olive oil
½ cup raisins
Preheat oven to 400 F. Mix cereals together in a medium bowl and pour milk over them to soak. Mix flour, baking powder, cinnamon and nutmeg in a large bowl. Add eggs, pumpkin, brown sugar, olive oil and raisins to the bowl containing cereals and milk. Mix well. Stir the wet ingredients into the dry ingredients and mix until evenly moist. Spoon the batter into a muffin cups that have been lined, filling each cup nearly full. Bake 20 minutes or until brown.
