Meatloaf and Mashed Potato Cupcakes
Ingredients
- 1 egg
- ¾ cup milk
- ¾ cup instant oats
- ¼ cup finely diced onions
- 1 cup shredded cheese
- ½ t. salt
- ½ t. pepper
- 1 lb. lean ground beef
- 2/3 cup ketchup
- 2 t. mustard
- 2 T. brown sugar
- 1 (4-oz.) package instant mashed potato flakes (any flavor)
- 2 T. butter
- 2 oz. cream cheese
Directions
Preheat oven to 350 F. Crack egg into a medium bowl and mix in milk, stirring well with a fork. Add oats, onion, cheese, salt and pepper. Mix well, then add ground beef. Spray cupcake/muffin tin with nonstick cooking spray and press meat down into each cup. Mix ketchup, mustard and brown sugar and put a spoonful on each meat cake. Bake for about 25 minutes or until internal temperature reaches 160 F. While meat cakes are baking, make the potato frosting. Makes 12 meat loaves.
To make potato frosting, prepare instant potatoes according to package directions. Add butter and cream cheese and let potatoes cool slightly. Put most of the potatoes into a frosting bag with your favorite decorating tip. If you don’t have these, you can put potatoes into a large zipper-seal plastic bag and cut off the corner of the bag to pipe on meat cakes. Or just put a scoop on top with a spoon.
