Sweet Potato Casserole Recipe

Ingredients

  • 1 large can sweet potatoes
  • ¾ stick margarine, melted
  • 2 eggs, beaten
  • 1 t. vanilla
  • 1 t. orange rind
  • ¼ cup milk
  • ¼ cup orange juice
  • Dash of salt
  • 1 cup pecans, chopped
  • ½ cup brown sugar
  • 1/3 cup flour

Directions

Mix together sweet potatoes, margarine, eggs, vanilla, orange rind, milk, orange juice and salt. Spoon mixture into 8-by-8-inch baking dish. To make topping, mix together pecans, brown sugar and flour. Put on top of sweet potato mixture. Bake at 325 F for 45 minutes.
