Bacon/Chicken Salad

Ingredients

  • ½ cup mayonnaise
  • 5 T. barbecue sauce
  • 3 T. chopped onions
  • ½ t. salt
  • 1 T. lemon juice
  • 3 T. sugar
  • ¼ t. pepper
  • ¼ t. hickory liquid smoke (optional)
  • 4 cups chopped lettuce
  • 4 cups chopped spinach
  • 2 large tomatoes, chopped
  • 2 hard-boiled eggs, sliced
  • 1½ lbs. boneless, skinless chicken breasts, cooked and cubed
  • 10 bacon strips, fried and crumbled
  • Shredded cheese

Directions

Combine dressing ingredients — mayonnaise, barbecue sauce, onions, salt, lemon juice, sugar, pepper and hickory liquid smoke (optional). Mix well. Refrigerate until ready to serve.

Place greens on a large platter. Spread tomatoes, eggs, chicken and bacon over greens.

Drizzle dressing over all or on individually when serving.
