Corn Salsa

Ingredients

  • 3–4 cups fresh corn, cooked and cut off cob
  • ¾ cup chopped onion
  • 4 avocados, peeled and chopped
  • ½ cup lime or lemon juice
  • 1 can (15-oz.) black beans, drained
  • 3 cups diced tomatoes
  • ½ cup fresh cilantro, finely chopped
  • 1 t. salt
  • 1 medium jalapeño pepper, finely chopped

Directions

Mix all together and refrigerate overnight before serving. Serve with tortilla chips.
