Famous Potato Chip Cookies

Ingredients

  • 3/4 cup sugar
  • 3/4 cup butter or margarine, softened
  • 1 egg yolk
  • 1 t. vanilla
  • 1½ cups sifted flour
  • 1/3 cup finely crushed potato chips
  • 1/4 cup chopped pecans or walnuts
  • 1/2 cup sugar (reserved)

Directions

Heat oven to 375 F. In a large bowl, beat sugar, butter, egg yolk and vanilla until light and fluffy. Add flour to sugar mixture; mix well. Stir in potato chips and nuts. Roll dough into 1-inch balls. Place 3 inches apart on ungreased cookie sheets. Lightly butter the bottom of a 3-inch drinking glass and dip in reserved sugar. Use glass to flatten the balls. Be sure to coat the glass with sugar before flattening each cookie. Bake at 375 F for 12–15 minutes or until golden brown on bottom. The cookies will not be brown on top! Allow cookies to cool before removing from cookie sheet.
