Ginger Peach Chutney
Ingredients
- 1 cup apple cider vinegar
- 4 T. fresh lime juice
- 4 T. minced fresh ginger
- 2 fresh jalapeño chiles, seeded and minced or ½ tsp. crushed red pepper
- 8 T. minced shallots
- 1 t. ground allspice
- 1 t. ground cloves
- 2 (½-inch) pieces of cinnamon stick
- 1 cup raisins
- 8 medium peaches, peeled, pitted, and quartered
- 1 1/3 cups sugar
Directions
Mix together vinegar, lime juice, ginger, jalapeños or crushed red pepper, shallots, allspice, cloves, cinnamon stick and raisins. Mix in peaches. Stir in the sugar. Bring to a boil, then reduce the heat and simmer, uncovered, 30 minutes or until thickened, stirring occasionally. Remove cinnamon stick.
