Harvest Squash Soup
Ingredients
- 1 ½ cups chopped onion
- 1 T. oil
- 4 cups mashed and cooked butternut squash
- 3 cups chicken broth
- 2 cups unsweetened applesauce
- 1 ½ cups milk
- 1 bay leaf
- 1 T. sugar
- 1 T. lime juice
- 1 t. curry powder
- ½ t. ground cinnamon
- ½ t. salt
- ¼ t. pepper
- ¼ t. ground nutmeg
Directions
In a large pan, sauté onion in oil. Add all other ingredients. Simmer uncovered for 30 minutes. Remove bay leaf before serving.
