Irish Beef Stew

Ingredients

  • 2 pounds beef, cut into ½-inch cubes
  • 5 ribs celery, chopped
  • 2-3 medium potatoes, cubed
  • 1 T. sugar
  • 2 slices bread, cut into ½-inch cubes
  • 3-4 carrots, sliced ½-inch thick
  • 1 large can diced tomatoes
  • 3 T. tapioca
  • 1 t. salt

Directions

Combine all ingredients. Cook 5 hours at 250 F. (Note: We used a lean cut of beef and needed to add several cups of water to the stew while it cooked.)
