Kale Salad

Ingredients

  • 3/4 cup sugar
  • ½ cup rice vinegar
  • ½ t. salt
  • ½ t. pepper
  • ¼ cup oil
  • 1 bunch kale, torn
  • 1 cup shredded carrots
  • ¼ red onion, sliced
  • ½ cup dried cranberries
  • ½ cup cashew pieces
  • ½ cup sunflower seeds

Directions

Mix dressing ingredients — sugar, rice vinegar, salt, pepper and oil — in a small bowl. Combine all salad ingredients — kale, carrots, red onion, dried cranberries, cashew pieces and sunflower seeds — in a large bowl. Drizzle dressing on individual servings.
