Peaches and Cream
Peaches and Cream
¼ cup flour
1 small (3 oz.) pkg. cook and serve vanilla pudding
1 t. baking powder
1 egg, beaten
½ cup milk
3 T. melted butter
1 (16 oz.) can sliced peaches
1 (8 oz.) pkg. cream cheese
½ cup plus 1 T. sugar
½ t. cinnamon
Sift flour, pudding mix and baking powder together. Set aside. Combine egg, milk and butter. Add dry ingredients. Mix well. Spread in a greased 8-by-8-by-2 inch pan. Drain peaches but save syrup. Place peaches over the mixture in the pan. Mix ½ cup sugar, peach juice, and cream cheese together and pour over the peaches. Combine 1 T. sugar and cinnamon and sprinkle on top. Bake 45 minutes at 350 F.
